1. Wash snails carefully and chop off the pointed ends.
2. Pound together chili paste ingredients until pulverized
3. Stir fry chili paste in hot oil to release the aroma.
4. Add snails and fry. Add water and simmer until cooked.
5. Add smashed pieces of lemongrass and galangal.
6. Add vegetables and stir.
7. Bring to a second boil and add ground rice. When vegetables are cooked, remove from heat.
